Tiramisu temptation 


Cheese mousse :- (A) 500g mascarpone cheese
                                     (B) 6 egg yolks , 100g castor sugar
                                (C) 20g gelatin , 30ml hot water
                                                      (D) 250g whipped cream , 50ml coffee liqueur




                      Coffee syrup :-       (E) 80g sugar, 80ml water, 10g instant coffee ,
                                            10ml coffee oil, 50ml coffee liqueur.
                                                            -cook till sugar dissolves. Add in coffee liqueur.
                       

                            Decoration :-          60g cocoa powder , 10pcs ladies’ figure biscuits



Method :-     
          
  1. Double boil ingredients (A) till soft & smooth.
  2.          Blend ingredients (B) then double boil till lukewarm.
  3.                                    Mix ingredients (C) until gelatin is well dissolve Add in No.2 & blend
  4.                                          thoroughly. Put it into a bowlof ice water.Keep stirring so as to bring down the temperature.
  5.                            Whip ingredients (D) then add into above & mix well incorporated.

                             Place a layer of sponge cake into mousse mould. Brush coffee
                             syrup on cake. Then pour ½ of mousse on top. Dip the ladies’
                         figure biscuits into the coffee syrup before arranging them on
                          the mousse. Sprinkle cocoa powder on top& freeze for 3 hrs
before serving.
